Chicken and Waffles
A yummy dinner idea from Able and Mum.
Ready: 55 minutes
Serves: 4 people
Ingredients
Waffles
113 gram butter
1 tbsp baking powder
50g sugar
270g flour
1 tsp salt
2 eggs
2 tbsp vanilla essence
2 cups milk
Chicken
4 boneless & skinless chicken thighs
1.5 cup buttermilk
1 tbsp fine sea salt
1 tbsp garlic powder
1 tbsp smoked paprika
2 tsp white pepper
2 tsp cayenne
Method
Waffles
Mix the dry ingredients. In a large bowl add the flour, sugar, baking soda, and salt. Whisk together to combine and set aside.
Mix the wet ingredients. Add the milk, eggs, and vanilla to a medium bowl. Whisk together. Add the melted butter to the wet ingredients and give it a stir.
Combine the wet and dry ingredients. Whisk the dry ingredients, then slowly pour the wet into the dry ingredients.
Cook the waffles. Pour batter onto your preheated waffle maker and cook until golden brown.
Tip
Don't over-mix the batter. It's really just getting mixed until it comes together. If you see a few pumps don't worry. They'll disappear in the waffle iron.
Chicken
Prepare boneless chicken. Start by patting the chicken dry and separating it into 8 pieces by removing the legs, wings, breasts, and drumsticks.
For the marinade: add and mix all ingredients together and add in the chicken. Cover and let marinate for 1-24 hours.
For the dredge: In a medium bowl combine all-purpose flour, cayenne powder, ginger powder, smoked paprika, white pepper, garlic powder, and kosher salt.
Cook the chicken - Heat oil in a heavy bottom pot to 350F.
While oil heats, dust a baking sheet with flour and drizzle, and toss a small amount of buttermilk marinade into the flour dredge.
Toss marinated chicken into the flour making sure to coat thoroughly, press flour into chicken, and place onto the floured baking sheet.
Carefully lay chicken (3-4 pieces at a time) into the frying oil for 12-15 minutes until the chicken registers 165F internally.
Remove chicken from the oil and let cool on a wire rack set on a lined baking sheet.
Assembly
Place a piece of chicken on top of waffles with maple syrup. Finish it with coleslaw or veggies of your choice and garlic aioli on the side.
