Butter Chicken

A favourite dinner of Siena and Luca's.

Ingredients 

  • Chicken breast cubed

  • Butter chicken sauce

  • Basmati rice

  • Sour cream to mix into sauce or plain Greek yoghurt

  • Oil for pan

Method: 

  • Wash one cup of rice, add to a saucepan and add 2 cups of water, bring to the boil, then reduce heat to the lowest setting, cook for 20 minutes. When rice is cooking, prepare and cook the butter chicken, as follows.

  • Dice chicken, heat pan with oil (1tbsp).

  • Brown the chicken, add sauce and reduce heat to a simmer for 20 minutes.

  • The rice and sauce will be ready at the same time!

As an accompaniment, you can have naan or roti, to dip into sauce.
