Mummy's ABC Soup (Malaysian Chicken Soup)

A Malaysian soup from Rufus + Mei Mei + Whānau!

Ingredients

  • 3 x carrots peeled and chopped into chunks

  • 3 x potatoes peeled and chopped into cubes

  • 2 x tomatoes cut into four quarters

  • 1 x big onion cut into four quarters

  • 1/2 inch of ginger

  • 3 cloves garlic peeled

  • 1 teaspoon ground pepper

  • salt to taste

  • 2 x tablespoon soy sauce

  • 3 x chicken frames

  • 4 x chicken drumsticks or thigh or breast (any cuts you like)

Method

  • Add chicken frames and water into the pot and boil. Remove the scum as you go.

  • Once the stock becomes clearer, add all the veges in except the tomatoes. Leave that to the last bit as they disintegrate easily.

  • Simmer on low heat for an hour, remove the chicken frames.

  • Add the drumsticks/thigh and tomatoes, simmer for another hour.

  • Season according to your taste.

  • Serve with rice or bread (or I add pasta in and the kids love it).
