Lentil Banana Muffins

Ingredients

  • 1 cup cooked lentils

  • 1/4 cup oil

  • ¾ cup mashed banana

  • 1 egg

  • ¼ cup sugar

  • 2/3 cup oats

  • 2/3 cup wholewheat flour

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • ½ cup chocolate chips

Method

  • Blend lentils and oil in a blender. Add all other ingredients except for chocolate chips. Blend.

  • Stir in chocolate chips.

  • Grease mini muffin tin. Add mixture to mini muffin tin.

  • Cook at 190°C for 12 minutes or until toothpick comes out clean.

    (1 cup uncooked lentils makes 3 cups cooked lentils. Cook 1 whole cup and freeze the remainder in 1 cup portions for another 2 batches).
