Healthy Banana Oat Muffins

These sugar-free muffins are a favourite for lunchboxes! - Hashem + Whānau

Yields: 10 muffins Prep time: 15 minutes Cook time: 20-25 minutes

Ingredients:

  • 1 cup ground oats

  • 1 egg

  • 2 ripe, mashed bananas

  • 3 tablespoons coconut oil 

  • 2 tablespoons honey

  • 1/2 teaspoon vanilla

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon cinnamon

  • Chocolate chips (to taste)

Instructions:

  • Preheat oven: Preheat your oven to 175°C.

  • Prepare muffin tin: Line a 12-cup muffin tin with paper liners.

  • Combine dry ingredients: In a medium bowl, whisk together the ground oats, baking powder, baking soda, and cinnamon.

  • Combine wet ingredients: In a separate bowl, combine the egg, mashed bananas, coconut oil, honey, and vanilla.

  • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.

  • Fill muffin tin: Divide the batter evenly among the muffin cups.

  • Bake: Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.

  • Cool: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
