Healthy Banana Oat Muffins

Ingredients:
1 cup ground oats
1 egg
2 ripe, mashed bananas
3 tablespoons coconut oil
2 tablespoons honey
1/2 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
Chocolate chips (to taste)
Instructions:
Preheat oven: Preheat your oven to 175°C.
Prepare muffin tin: Line a 12-cup muffin tin with paper liners.
Combine dry ingredients: In a medium bowl, whisk together the ground oats, baking powder, baking soda, and cinnamon.
Combine wet ingredients: In a separate bowl, combine the egg, mashed bananas, coconut oil, honey, and vanilla.
Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
Fill muffin tin: Divide the batter evenly among the muffin cups.
Bake: Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
Cool: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
