Healthy Lunches on Friday's

Muriel Haines —

Our vegetable garden has plenty of vegetables for us to use each Friday for our lunches.

Once again potato pizza was very popular. It was a great way to use finely chopped greens as a pesto under the potato topping.

Last week we made oven baked potatoes with a herb filling as well as a warm salad using plenty of kale and spinach. The coleslaw we made looked very colourful on the plate along with the other food. If you want a twist to an unbaked chocolate slice try using  weetbix and sunflower seeds in the recipe. The no baked weetbix chocolate slice was a nice treat after the first course. It is easy for children to make.

Next week we are having Potato and Celery Soup,  garlic bread and Easy Rhubarb Batter Cake

It was great to have parent help the other week. It certainly makes it easier to get the food prepared on time, as well as cleaning up afterwards. Thank you Alan. We welcome parent help.

Thanks so much Alan. — Image by: Muriel Haines

Presently we are preparing 45 lunches each Friday. A big thank you to parents for supporting this as part of our Garden to Table Programme.
