How to Make Perfect Meringues

Meringues are a classic dessert that's is my all time favourite with my family and friends. This step by step recipe will help you achieve the best results.

Meringues have been my absolute favourite dessert to make.

There are no set rules with Meringues, if you get the mixture right you can add a bit of colour or mix it up with flaked almonds, chocolate chips and change the flavour to your desire.

Ingredients:

  • 3 Egg Whites

  • 1 cup caster sugar

  • Whipped cream (to serve)

  • Fresh fruit- Blueberries, strawberries, pineapple, kiwi fruit.

Instructions:

  1. Prep the oven:
    Preheat oven to 110°C. Line two baking trays with non-stick baking paper.

  2. Whip the eggs:
    Place egg whites in a clean, dry bowl. ( I use a Kenwood mixer) Beat on high speed until soft peaks form. This should look lush white peaks.

  3. Add sugar gradually is the secret:
    Slow the mixer speed and start adding sugar one tablespoon at a time. Increasing the speed between additions to help dissolve the sugar. Continue beating until thick, glossy peaks form, and the sugar has dissolved. This should take about 5 minutes. (see additional tips)

  4. Option: This is when you add the flavour, I add raspberry essence and a little red food colouring. ( use what ever flavour your desire) Banana is my second favourite with yellow food colouring.

  5. Shape and bake: My favourite part is to have fun with the pipping bag.
    Pipe the meringue mixture onto the prepared trays with baking sheet. Bake for 45mins until crisp. Leave in the oven to cool. ( leave the door open to let the heat escape) You can eat once cold, about 1 hour.

  6. Serve:
    Serve meringues with whipped cream or with your favourite fruit. I personally like blueberries and strawberries with passionfruit pulp.

Additional Tips:

  • Ensure your bowl and beaters are grease-free and dry.

  • Use a metal bowl to achieve better volume.

  • Test for sugar dissolution by rubbing the meringue mixture between your fingers, if it's grainy then the sugar has not dissolved, continue beating.
