South D Library's Dianne Mears taste tests and shares some of her favourite recipes from the Dunedin Public Libraries cookbook collection.

At the moment I’ve gone a bit crazy with the cookbooks, I have about 12 out from the library as I am contemplating what to make. Every book I look at has a picture that catches my eye and I automatically want to take it home on the off chance that I might find some inspiration. Unfortunately, sometimes having too many choices isn’t a good idea… so out comes the trusty Edmonds Cookery Book.

As I was looking through the pages, I came across one of my favourites - Ginger Crunch. It was time to put some music on and get creative in the kitchen. Funny how time flies and before I knew it, I had another slice ready to go in the oven.

I’d never made the Coconut Chocolate Brownie, but it sure looked good when it came out of the oven. The hardest part was letting them cool down before cutting into them. I managed to show some will-power and wait for an hour and then enjoyed them with a cup of coffee while I was reading a book on the deck.

Sometimes my creative inspiration escapes me, and I want a quick and easy cheat in the kitchen. For those days I have a packet of Scone mix that I can grab and make up a small batch of scones for my crew for lunch. Especially if I only want to make a couple of scones. Cheese is very popular in my house.
