Dianne's Kitchen

South D Library's Dianne Mears taste tests and shares some of her favourite recipes from the Dunedin Public Libraries cookbook collection.

If you enjoyed watching Nadia Lim on TV with her Comfort Kitchen series during lockdown, you will love the book that she produced as well. I enjoyed the series so much that I have bought my own copy and the library has copies too. As a result of this, my family now has a firm favourite - the Pantry Muesli Bars on page 110.

They are really yummy and don’t last long in the container, I’m lucky if get some. Fortunately, they are nice and simple to make, and I have been known to make a batch early in the morning before I go to work.

If you are running low on inspiration have a look through some of the food magazines that the library has. I grabbed a copy of Australian Healthy Food Guide and flicked through it, hoping that something would catch my eye.

The Open Sandwich looked really good and I just used ingredients that were in my fridge already, so I ended up using chicken. It looked great and tasted fantastic.

I love nothing more that looking at the assortment of Australian Women’s Weekly cookbooks, when Memories & Recipes from the Test Kitchen caught my eye I had to take it out. I decided to tackle this delicious thing: Vanilla Passionfruit Slice page 137 – basically a custard square.

This was a big hit and so yummy, I’m allowed to make this again.

I also tried Anzac Slice page 137 – again easy to make and only lasted a few days then the tin was empty.

I love looking through the pages and seeing what takes my fancy. This book brings back lots of memories, with recipes spanning from the 1970’s to the 2010’s.

Check out these books when you are in the library next and see if you can find something that makes your mouth water.
