Zoodle Bolognese - yum!
500g extra lean beef mince
1 medium onion, finely chopped
1 clove garlic, crushed
1 400g canned diced tomatoes
450g tomato passata
1½ tbs tomato paste
1 tsp, mixed variety dried herbs
1 individual beef stock cube
3 medium zucchini (courgettes), spiralised
1 tbs, fresh basil small leaves, to serve
- Lightly spray a large non-stick saucepan with oil and heat over medium heat. Add mince, onion and garlic and cook for 5 minutes or until mince is browned and the onions have softened.
- Add canned tomato, passata, tomato paste and mixed herbs to the pan, stir well and bring to the boil. Crumble in stock cube and stir again. Reduce heat and simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened.
- When sauce is nearly ready, lightly spray a large frying pan with oil and add zucchini. Cook over medium heat for 1-2 minutes or until slightly softened. Season to taste, divide among plates and serve topped with sauce and garnished with basil.
NotesVariation: Add 2 tbs dry white wine after browning mince and onion in Step 1. Cook for 1 minute, or until evaporated. Enjoy!
