Curried Parsnip Soup
Try this warming winter soup - quick and easy
1 Tbsp butter 1 onion, chopped
2 large parsnips, peeled and chopped into 1cm cubes
2 cloves garlic, finely chopped
750ml chicken stock
2 tsp curry powder
1 tsp cumin
½ cup cream or coconut cream
Salt and pepper
Sumac to garnish
Melt the butter and sauté the onion until soft then and parsnips and garlic. Cook until golden then add spices and cook for a further minute. Add stock and simmer for about 20 minutes. Remove from heat. Puree then add cream and seasoning.
