Rēwana Bread
School wide our tamariki made Rēwana Bread (potato bread) to share at their Matariki Breakfast celebrations.
Rewana Bread is a traditional Maori sourdough potato bread. The names stems from the Maori word 'riwai' meaning potato. A bug or starter is created a few days before the actual baking, using flour, water, sugar and potato. This is left to ferment, which when finally added to the rest of the bread ingredients to make a dough, produces a wonderfully textured and flavoursome loaf.
Each class made their own 'bug' and watched it bubble, ferment and grow in size. Then came the fun part of kneading the dough and forming a loaf ready to be baked. The warm Rēwana bread was served with butter and was delicious.
