2016 International Food Design Conference & Studio by Otago Polytechnic

Food experience - more than taste sensation

Otago Polytechnic's Food Design Institute hosted an International Food Design Conference and Studio in Dunedin in 2016.

Approximately 120 registrants, from secondary school students to internationally famous chefs, attended the event. All were challenged to think differently about food, to explore beyond the plate in engaging people in the whole experience of food. Another key message was "love food hate waste", considering creative ways to use food that reduce waste.

Lectures, workshops, tutorials and dining experiences over three days allowed delegates to explore the influence of the people who grow, harvest, manufacture, cook and deliver our food.

It is hoped that the conference will result in increased boldness and innovation in food experiences in New Zealand. The conference also provided an opportunity to progress initiatives to make New Zealand food famous beyond our shores.
