Mrs Betts has shared an Easter recipe

Simnel cake is something they make in England at Easter.

It is simple fruit cake with a layer of marzipan through the middle, as with most fruit cakes it keeps really well. 

You can use any fruit cake recipe and just put a layer of Marzipan icing through the middle of the cake. It is also fun to make your own Marzipan with ground almonds.
