Some of the Enviro kids got together a fortnight ago to make an alternative snack to muesli bars. We all thought that if we made these we would further cut down on the amount of rubbish being generated through buying store bought, highly packaged snack bars. We thought they were super tasty! Try them out a home.

Apricot Bliss Balls

1 cup dried apricots

100g ground almonds

1/4 cup sunflower seeds

2T coconut

zest of 1 orange

1T honey

3T coconut oil

Place all ingredients in a food processor and blend until mixture is like a fine crumb texture. Roll into balls and coat in more coconut. Chill in fridge until firm.
