Veggie Sausage Rolls

"We have found this to be a versatile recipe that has turned into a family favourite for picnics, after school snacks, lunchbox item and parties." - Yamuna + Whānau

Filling

  • 1 small tub cottage cheese

  • 1 cup rolled oats

  • 1 tbsp mixed herbs

  • 3 tbsp soya sauce

  • breadcrumbs (optional)

  • 2 sheets puff pastry (New ways or Woolworth brand - or Pam’s vegetarian plant-based puff pastry)

 

Method

• Preheat oven to 180◦C. Line baking tray with baking paper.

• Combine first 4 ingredients in a bowl, crumble up any large chunks of cottage cheese as you mix the ingredients together. Let mixture sit for 10 minutes for moisture to absorb into oats.

• Lastly, add bread crumbs if needed, (usually it is not necessary to use bread crumbs). Mix enough breadcrumbs, roughly 1/4 cup  until you can make a small “sausage” in your hands without the mixture being too sticky on your hands. (optional)

 

To assemble:

• Cut one sheet of pastry sheet in half lengthways.

• Make a roll of mixture and place it on the middle of the pastry lengthways.

• Wet one edge of pastry and roll the pastry around the mixture.  Make sure the edge is sealed nicely.  

• Continue until all mixture is used up. Cut to desired size and place on tray.

• Brush rolls with milk & bake for about 15-20mins until golden on top and bottom.
