"This is a family favourite and a regular rotation in our household. It is an Australian classic (Xavier is half Australian on his dad's side). We opened a pop-up restaurant just after lockdown centred around Xavier's dad's famous parmigianas. We are teaching Xavier how to make this dish and he is always keen to pitch in and help.
